NEW RELEASE – Our First Méthode Traditionnelle!
Crafting wine by Méthode Traditionnelle requires patience, passion, and time. We’ve created ours from hand-picked Sauvignon Blanc grapes, grown on our hilltop blocks near our little love shack. These vines, exposed to the elements, struggle for survival, producing smaller berries with thicker skins that are packed with flavour.
The wine greets you with beautiful warm brioche and subtle toasty notes, balanced by soft herbal nuances and a hint of ripe peach. Its delightful effervescence dances across the palate, leading to a lovely, dry Brut finish.

Colour: Pale gold with a delightful fine effervescent bubble. Aroma: Delightful aromas of warm brioche bread and subtle toasty oak. Palate: Biscuit and soft sweet herbs with ripe peach. It has wonderful structure and subtle layers. The 2 years spent on lees in the bottle adds texture on the palate, which lingers pleasantly. Brut dry finish.
The grapes for this Méthode Traditionnelle were hand-picked in early March 2022, entirely from our family-owned Hill Blocks in Lower Dashwood, Awatere Valley. At approx. 300m elevation, the vines are very exposed to the elements and struggle for survival, very windy and difficult soils – we are adding homemade compost and interrow planting between the vines to improve the topsoil.
Making wine by Méthode Traditionnelle takes patience, love and time. Twice fermented, racked, riddled and dosaged, following the traditional method. The base wine blend was bottled and underwent 2nd fermentation, then aged for 2 years in the bottle on lees, adding plenty of texture of the wine. 5/gl residual sugar (RS) was added at dosage to keep the final style Brut. Disgorged October 2024.
