The grapes for this wine were sourced entirely from our family-owned Hillside vineyard in Lower Dashwood, where the elevated and windy location challenges the vines. Rich fruit, buttered toast and biscuit start this wine off beautifully. It has a wonderful full bodied structure with balancing acidity. The wild yeast ferment and barrel aging bringing complexity to the wine and a wonderful texture on the palate, which lingers pleasantly.

A wine to enjoy with mild and creamy cheeses like Brie, white fish, shellfish, chicken or fish in creamy sauces and vegetable dishes with bright, fresh flavours.
Colour: Pale gold with hints of green. Aroma: Delightful aromas of tropical fruit with mealy and biscuity notes. Palate: Rich fruit, buttered toast and biscuit start this wine off beautifully. It has a wonderful full-bodied structure with balancing acidity. The wild yeast ferment and barrel aging bringing complexity to the wine and a wonderful texture on the palate, which lingers pleasantly.

The grapes for this wine were sourced entirely from our family-owned Hillside vineyard in Lower Dashwood, where the elevated and windy location challenges the vines. The vines were pruned to single cane, single spur. Yield was approximately 4 tonnes per hectare, with the number and size of the berries having good skin to juice ratio, giving the final wine a more intense flavour. Due to the lower yields, the Chardonnay grapes were picked all in one go in March 2022.
Once at the winery, the grapes were whole bunch pressed then put into two new French oak barrels with the rest in tank (resulting in 30% new oak). The fermentation took place with wild yeast and the wine was fermented to dryness. 100% of the wine went through malolactic fermentation.
