The grapes for this wine were sourced entirely from our family-owned Hillside vineyard in Lower Dashwood, where the elevated and windy location naturally challenges the vines.
Ripe white peach, buttered toast and a touch of biscuit lead into a full-bodied palate with bright, balancing acidity. Wild yeast fermentation and barrel ageing bring complexity and texture, while citrus lingers on the finish.

Colour: Pale straw. Aroma: Delightful aromas of white peach with buttered toast and biscuity notes. Palate: Rich fruit, ripe white stonefruit and biscuit start this wine off beautifully. It has a wonderful full-bodied structure with balancing acidity. The wild yeast ferment and barrel aging bringing complexity to the wine and a wonderful texture on the palate, which lingers pleasantly.

The grapes for this wine were sourced entirely from our family-owned Hillside vineyard in Lower Dashwood, where the elevated and windy location naturally challenges the vines and helps concentrate flavour. The vines were pruned to single cane, single spur, with Mendoza clone selected for its richness.
A wet spring was followed by a settled, dry summer, allowing slow, even ripening. Moderate yields produced small berries with a high skin-to-juice ratio and bright natural acidity. The Chardonnay was hand-picked in late March 2023 in pristine condition.
The hand-picked grapes were whole-bunch pressed, then fermented in French oak barrels using wild yeast. Thirty per cent new oak was used, with the balance in older barrels.
The wine underwent malolactic fermentation and was aged in barrel for nine months before bottling in March 2024, adding texture and complexity while retaining the bright natural acidity of the vineyard.
